Turkey lasagna

So - with my daughters busy sports life in school having a good and balanced high protein meals, that are also are quick and easy to make when the school routine takes over. 

 

So I've made this to be quick, simple and nutritious.

 

Ingredients

 

1-2 aubergines cut in to slices

500g turkey mince

1 brown onion

1 tin of tomatoes

3 carrots that are washed pealed and chopped in to small squares

2-3 tbs tomato puree 

Either a large handful of fresh parsley or a tsp of oregano 

1 chicken stock cube 

Drizzle of olive oil 

 

 

Method 

 

Pre heat the oven to 200º C 

 

Place the aubergine slices in the oven with a drizzle of oil over them, and cook for 15 minutes. Whilst thats cooking start the onions and mince.

 

Brown the onions, on a low heat and after about 5 minutes add the mince, then when the mince is cooked add the carrots.

 

Take the aubergine out of the oven and place on a plate, ready to use 

 

Gentle stir them for a further 5 mins and add the tomatoes and puree, and the stock cube crumbled on top. 

 

Cook for about 5 minutes, on a medium heat, and then layer the aubergine slices on the bottom, then add the mince, then another layer of the aubergine and if you like a little sprinkle of cheese. 

 

Simply leave in the oven for about 10-15 minutes.

 

serve with some fresh spinach yummy.
