Belle's Tomato pasta!

Belle(my daughter) stayed at home today whilst I went out for some errands and (sorry but proud mother syndrome coming...) Without my help I came home and she had cooked her own pasta with tomatoes?! I didn't even know she knew how to do this, but she said it was very easy and just made it up as she went along.

I liked the look of it because it was so colourful and you know what they say, 'Eat a rainbow.'

She didn't write down the recipe but it was pretty simple;

Ingredients;

1/2 can chopped tomatoes

2 large tomatoes

Veg stock

Dollop of yogurt or creme fraise

Sprinkle of salt and pepper

Tagliatelle (or any pasta)

Pinch of parmesan

Basil leaves

Method;

Place the pasta in a pan of boiling water and leave to boil.

Whilst the pasta is cooking, in a separate frying pan heat the all tomatoes (can and fresh) with some veg stock until bubbling slightly.

Then add the creme fraise (or yogurt) and sir.

When you think the taste and consistency is good then add some salt and pepper to taste

Word of advice- make sure the pepper lid is FIRMLY on because belle didn't realise it was loose and managed to tip all of it into her finished pasta sauce!!! But she managed to scoop them out. The lesson to learn from this is that when cooking you have to be open to mistakes because they will happen, just take them in your stride I told her :)

Anyway, next drain the pasta and put back into the saucepan (now empty of the water) and add a drizzle of olive oil (or butter).

Stir around and when it tastes nice then add to a bowl and pour the tomato sauce on top. And finally, grate some cheese on top and garnish with fresh basil leaves!

Done! Now the good bit... enjoy the food!! I hope you liked it and didn't have too many cooking disasters : )
