Beetroot and honey cake
This is a simple and tasty treat that is a great after-school snack whilst sneaking in some Beetroot that is high in immune-boosting vitamin C, fibre, and potassium, which is great for nerve and muscle function.
This along with a good dose of iron, and other toxin cleansing minerals and vitamins, you can see why its a great treat for the family.
Ingredients
100g cooked beetroot without vinegar (Florette do a good pack that has no vinegar,)
4 tablespoons of almond milk (or normal milk)
50g almonds ground
100g butter
80g raw caster sugar ( or normal if you don't have it)
4 Tbsp honey
3 eggs lightly beaten
150g self raising flour
Method
Preheat our oven to 170º c
Blend the beetroot and then place all the juice and blended beetroot in a bowl with the milk, then add the almonds.
Use a stand mixer, or a hand whisk to cream together the butter, sugar and the honey. add the eggs slowly.... slowly !! or they curdle.
Pour in to a loaf tin (lined and greased)
cook for 50-60 minutes - To test if the cake is done, use a skewer and place it in the cake if it comes off clean its ready.
