Make your mother's day


We all have busy lives, and may not give enough time to mother's day, and how many of us think, what can we make for a perfect Mother's day?

I think I have found a couple of ideas, food wise, that are child-friendly, and taste amazing!

Enjoy.

The 2 recipes could not be easier, and (believe my tummy, have been tried and tested)

INGREDIENTS

100g caster sugar 100g plain flour 1 lemon - juice and the zest 3/4 tsp baking powder 100g butter ( melt all the butter on a gentle heat, and cool very slightly)

METHOD

Preheat the oven to 200ºC

First brush the melted butter over the madeline tray, or cupcake tray, then dust with flour and tap off the excess. (this really helps to get the cakes to not stick so do it throughly.

Whisk your eggs and sugar in the bowl, they them go slightly frothy, when that happens, you can slowly add the other ingredients.

The key is to leave the mix to rest for about 15-20 mins.

After this time the mix can be poured into the cases, and put straight into the oven.

These beautiful treats only take 8-10 mins

Then you can just cool and serve x

Next are the most amazingly moreish ginger biscuits.

I love these, though I save them for special occasions (mother's day, is one of them....because we are...amazing x) so try not to eat them all before you give them as a present.

INGREDIENTS

90g butter 90g caster sugar 90g golden syrup 225g self-raising flour 2 tsp ground ginger 1 in skinned raw ginger grated

METHOD

PREHEAT THE OVEN TO 180 ºC

Grease a baking tray

First, melt the butter on a low heat, and add the sugar and the golden syrup, once it is all melted, remove from the heat, then slowly add the dry ingredients.

Mix them all up, and you will find it starts to form a dough, put some flour on your hands, you will be able to roll the dough into small balls - the balls should be about the size of a 50p piece, leave a small space between the cookies - if you bake these for about 10 mins (or until the biscuits are golden)

Leave to cool and they are good to go x
