Quick,tasty,healthy snacks
I have a sporty and active teenage girl, snacks are essential for post school. We all know the drill, the kids come home and before even saying two words their heads are in the fridge searching for food.
So I have a few snacks and I thought I would share, they are quick cheap and healthy, make them in advance and store them for 3-4 days. Perfect for a school week.
ROASTED CHICKPEAS
Ingredients
2 x tins of chickpeas
Glug of olive oil
2 tsp ground cumin
1 tsp paprika
1tsp chilli or cayenne pepper
Method
Preheat the oven to 170ºC
This is seriously easy to do, but the key is to make sure that the chickpeas are drained and dried. So after you have washed the chickpeas you need to pay dry with kitchen roll.
Then spread the chickpeas onto a baking tray, drizzle with a little olive oil, and the spices, then roll then gently to coat all round.
cook for 15-20 minutes, but check after 10 minutes and shake the peas about to cook evenly.
they should be slightly crispy when done, then all you do it eave to cool then put in a airtight container. I find they keep for 3-4 days.
KALE CRISPS
Ingredients
1 x bag ( 200g) of kale or my personal favourite cavolo nero
Drizzle of olive oil
1 tsp paprika
sprinkle of salt
Method
Preheat the oven 150ºC
Slice the kale into crisp sized pieces, cutting out any of the stalks as they are bitter. Put it all in the bowl with the salt and oil and the paprika, and coat all the leaves well.
Then spread them out flat on a baking tray and bake for about 7-10 mins (keep an eye of them s they can easily burn.
leave to cool, then store in an airtight container for about 5-6 days
