Simple feta salad lunch
This is a great Quick,easy, and healthy lunchtime food.
Sometimes we are all running about with busy chores in our house and it’s important to me too have a few quick and easy recipes for lunch, that are healthy too.
Ingredients
100g cous cous
1/2 block feta
2 chopped cooked beetroot
1 red pepper
1 onion
1 yellow pepper
2 carrots
2 avacardo
2 tomatos
1 tsp paprika
1tsp cumin
red chilli's (to decorate)
1/2 tsp cayanne
salt and pepper
1/2 veg stock cube crumbled
Method
Firstly chop the onions and the peppers and tomato chunks, and place in an oven proof tray add a drizzle of olive oil on the top, and place in the oven to cook for 10-15 mins.
Next boil some water and place the cous cous and the spices and stock in a bowl. When the water is boiling slowly pour the water in to the cous cous until it reaches the top of the cous cous.
Now simply place a plate over the top of the bowl and leave. (Yes its that simple)
Next to make the feta beetroot and mint salad, and prepare the avocado.
Firstly chop up the mint finely, and the beetroot into chunks. Place in a bowl and crumble the feta then gently mix, you can add a little lime or lemon juice (don't over do it)
The avocado is just sliced longways (taking the stone out) and lay the slices flat and fan out and drizzle a little lemon juice (this stops the avocado from going brown) and chop a few red chilli's for a zap of favour and colour.
I also made a small bowl of simple grated carrot to add to the salads, and sliced some delicious local bakery sough dough bread.
I love these quick and pick and mix meals.
