Quick, easy, lamb, bulgur wheat and nero salad,
I love this recipe, Its great at the weekend when you want something healthy, quick and tasty for the family.

Ingredients
250g Bulgur wheat 1-2 Garlic cloves 500g Lamb mince 1 Pack flat parsley (about 28-30g) 3-4 Tomatos 1/2 Beef stock cube ( or homemade veg stock, as less salt) 1 1/2 Tablespoons of ras el hanout 1 Tablespoon of paprika 2 Teaspoons of honey 1 Lemon Splash of olive oil 400g (2 bags roughly) Cavolo Nero
Method
First boil a saucepan of water ready for the bulgur wheat. Whilst that boils, heat up the oil in a frying pan and brown the mince.
Boil a pan of water for your cavolo nero.
When your water is boiling add the bulgur wheat for 6-7 mins.
Now, Drain any excess fat from the mince and add the finely chopped garlic to your mince, cook for a couple of minutes and then crumble the beef stock over the top, and add the spices, turn the heat down a cook for a couple of minutes.
Chop your tomato's and parsley and leave to the side. Chop the cavolo, and add to the boiling water - This will be cooked in about 3-4 mins.
Remove the mince from the heat, and add the honey and stir. Sieve the bulgur, then return the bulgur back to the pan. Add the parsley, a squeeze of the lemon (to your taste) and the tomato's and parsley then gently stir, add the mix to the mince and stir.
