I love the fresh mustard taste of watercress soup, delicious and packing some great antioxidants with Vitamin A, C, K and many more.
So here is a nice quick and easy recipe for one of my favorite soups.
1 Medium white onion
2 Cloves of garlic
450ml Vegetable Stock
2 Bunches of Watercress
Start by pealing and chopping the potatoes, then peal and chop the onion, peal and chop the garlic. Heat a little olive oil in a large saucepan and add the onions, garlic, and potatoes on a medium heat, being careful not to burn the pan. Do this until the onions are translucent, add the stock and simmer until the potatoes are soft.
Thoroughly wash the watercress and chop when the potatoes are soft add the watercress and cook for 4-5 minutes. Then just blend till very smooth.
