I don't like adding sugar to anything but I do like to make these as a special treat. They are easy to make, and a great Sunday snack, serve with maple syrup, or Crème fraîche and blueberries.
220g Self Raising flour
40g Caster sugar
280ml Soya milk
Veg oil for the frying pan.
Grab a large mixing bowl and sift the flour and the sugar into the bowl. In a separate bowl, whisk the milk and eggs together, then add them to the flour and the sugar, the consistency should be like double cream. Leave in the fridge for about 20 mins and let it activate a little.
Then oil a frying pan and put on a low heat, spoon the mixture in to the frying pan to form little circles, when you see little bubbles on top of the pancakes flip them over, cook for a min then take off the heat.
